Special White Karahi Masala is a rich, creamy Pakistani-style karahi with a mild (non-red) gravy—perfect if you want something flavorful without heavy chili heat. Here’s a simple but authentic version you can try at home:
Ingredients
- Chicken (boneless or with bone) – 1 kg
- Yogurt – 1 cup (well whisked)
- Fresh cream – ½ cup
- Ginger garlic paste – 2 tbsp
- Green chilies – 5–6 (slit)
- Black pepper powder – 1 tsp
- White pepper powder – 1 tsp
- Salt – to taste
- Cumin seeds – 1 tsp
- Coriander powder – 1 tsp
- Garam masala powder – 1 tsp
- Lemon juice – 2 tbsp
- Oil or ghee – ½ cup
- Fresh coriander – for garnish
- Julienne ginger – for garnish
Instructions- Heat oil/ghee in a karahi (wok-style pan). Add cumin seeds and let them crackle.
- Add chicken and cook on high flame until it changes color and water dries.
- Add ginger garlic paste and sauté well.
- Lower heat and add whisked yogurt slowly, stirring continuously so it doesn’t curdle.
- Add salt, black pepper, white pepper, and coriander powder. Mix well.
- Add green chilies and cook on medium heat until oil starts separating.
- Stir in fresh cream and cook for 5–7 minutes on low heat.
- Sprinkle garam masala and add lemon juice.
- Garnish with fresh coriander and ginger slices.
