Garam Masala Powder
Garam masala powder is a spice blend widely used in Indian cuisine, from curries and lentil dishes to soups. Whole spices of cinnamon, mace, peppercorns, coriander seeds, cumin seeds, and cardamon pods are toasted in a pan to release their aromatic flavors, then ground to a powder.
Garam masala powder is best when prepared with good quality whole spices that have been lightly roasted in heavy bottom pan and ground. This powder goes great in making every day vegetarian and non-vegetarian dishes. It is always added at the end of any preparation to finish the dish.
INGREDIENTS:
Green Cardamom – 20 pcs
Cloves – 2 tea spoons
Cinnamon – 2 pieces of 2 inches
Bay Leaves – 5 leaves medium size
Nutmeg – half nutmeg
Mace – 4 flowers
PREPARATION METHOD:
Lightly roast small size whole spices like coriander seeds, cumin and caraway seeds on very low heat, without changing colour.
Now roast all other spices in the same way.
Spread on a shelf or a large plate.
Let it cool down completely for 15-20 minutes.
Grind the spices in a blender in two batches, to avoid increase in temperature while blending.
Take out in a glass jar and keep it air tight always.
You may store it and use up to 2-3 months.
