Homemade Biryani Masala Recipe
Ingredients:
- 2 tbsp coriander seeds
- 1 tbsp cumin seeds
- 1 tbsp black peppercorns
- 6–8 green cardamom
- 2 black cardamom
- 6–8 cloves
- 1–2 small sticks cinnamon
- 2 bay leaves
- 1 tsp fennel seeds
- 1 small piece mace (javitri)
- ½ nutmeg (jaiphal)
- 4–5 dried red chilies
Instructions:
- Dry roast all spices on low heat until fragrant (2–3 minutes).
- Let them cool completely.
- Grind into a fine powder.
- Store in an airtight container.
How to Use:

Add 1–2 teaspoons while cooking biryani (chicken, beef, or vegetable).

Sprinkle a little on top before dum (steaming) for extra aroma.
